SO WHAT MAKES A SPRITZ?

The spritz is generally known as a drink from Northern Italy, an aperitivo with both bitter and sparkling elements. There is no hard and fast rule about how one is made, but generally it is acknowledged that is should have a bitter component (think Aperol) a wine component (often prosecco) and a dash of something to lengthen it (usually soda or tonic). Traditional recipes often follow a 3-2-1 rule: 3 parts prosecco, 2 parts Aperol & 1 part soda.

Designed to be consumed at sundown, we wanted to construct a Spritz around our ESTATE vermouth and British Cassis, which is just so redolent of English summers. We created this recipe adding Londinio Aperitivo to replace the traditional Aperol, and used Broken Clock Vodka, a botanical vodka distilled with English apples, as the final piece of the puzzle.

EPISODE 2: WHITE HERON DRINKS.

Each month we aim to showcase one of the independent brands that we love and have used to create the cocktail of the month.

Whittern Farm in Herefordshire have been growing blackcurrants since 1880. Once a mixed arable farm, the family chose to take the road less travelled: cultivating blackcurrants, a quintessential flavour of the British countryside.

Now under the stewardship of Jo Hilditch, their White Heron Drinks brand has been going from strength to strength since their first release in 2005.

PROCESS

Crafted with blackcurrants grown in the fields of their Herefordshire farm, this liqueur is rich and full bodied. Freshly picked British blackcurrants are allowed to ferment naturally with champagne yeast, blended with vodka to fortify and a little sugar to bring out the intensely fruity flavours.

TASTING NOTES

Fruity yet sharp flavour, the burst of blackcurrant imbued with a hint of sweetness. Leafy mint and spicy blackcurrant on the nose - nuanced and complex. The acidity level is amazing. Sweet and well-balanced. Delicious and highly drinkable.
